Split Pea-Vegetable Soup
2 1/4 cups dry green split peas
1 (16 ounce) can tomatoes, cut up
1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup chopped carrots
3 tablespoons snipped parsley
2 tablespoons vinegar
1 clove garlic, minced
2 1/2 teaspoons salt
1/2 teaspoon dried oregano, crushed
6 slices bacon, crisp-cooked, drain & crumbled
In large saucepan combine peas and 8 cups of water. Add undrained tomatoes, onion, celery, carrot, parsley, vinegar, garlic, salt, and oregano. Bring to boiling; reduce heat and simmer, covered, 2 hours. Add bacon; simmer covered, 15 minutes more. Season with salt and pepper.
