Every summer, the fresh wild blueberries of Nova Scotia make their way from the fields to our tables. From gourmet salads to extra rich desserts, this antioxidant filled fruit has become a yearly tradition in households around the world. This recipe will take the awesome taste of wild blueberries from a longed for summer tradition, to a year round taste experience!

Wild blueberry freezer jam is a fantastic way to enjoy not only the taste, but the awesome health benefits of this powerful berry all year long, with this simple and easy to follow recipe. All you need is a bowl, a spoon or two, and some airtight bottles for storing.

Ingredients Required:

3 cups crushed wild blueberries (This is the hardest part! Yes...you've got to mash 'em up!)
1 Tbsp lemon juice
2 Tbsp granulated sugar
1 Box light pectin crystals

Easy Preparation:

In a large bowl, stir lemon juice into crushed blueberries. Once mixed, add sugar and stir. Lastly, mix in pectin crystals and let stand for 1/2 hour, occasionally stirring the mixture.

That's all there is to it! Once your jam has set for the required 30 minutes, simply pour your mixture into clean airtight containers, remembering to leave a little room at the top of the jar. Let sit overnight. In the morning, your wild blueberry freezer jam will be ready for serving...and you barely broke a sweat!

The fantastic thing about this easy and simple recipe is that you can store your wild blueberry freezer jam in the refrigerator for up to three weeks and in your freezer for up to eight months! From french toast to oatmeal cookies, this is an awesome way to take advantage of the taste and health benefits provided by Nova Scotia's Wild Blueberries!
