Its All About Lunch
Have the lunch blues? Need some new ideas? Try some of our lunchable temptations.
 
Granola Treat
Ingredients:
  • 4 cups rolled oats
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • 1/3 cup honey
  • 1/4 cup safflower oil (or canola)
Directions:
 
1. Combine all ingredients. Stir gently until everything is completed coated.
2. Spread the mixture on a cookie sheet. Bake for 30 minutes at 325 degrees. Or until lightly browned.
Cool. Then store in an airtight container.
Meatball Sub
Ingredients:
  • 2 Mozzarella cheese slices (cut in halves)
  • tomato sauce
  • 1/2 pound Ground beef
  • 2 tablespoons dry bread crumbs
  • 1/4 teaspoon salt
  • Dash Pepper
  • 1 small minced onion (optional)
Meatballs :
Mix ground beef, minced onion, bread crumbs, salt and pepper. Shape into meatballs. Arrange meatballs on a cookie sheet, broil until browned, turning once.
 
Directions: Cook meatballs until browned. Place mozzarella cheese slices cut in halves down the length of the submarine bread then add 7-8 meatballs and smother in tomato sauce. Heat just until cheese is melted. Add a dash of pepper to taste. Yum delicious!!
Creamy Cucumbers
Ingredients:
  • 2 English cucumbers
  • 1/2 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
Directions: Combine all ingredients except cucumber. Pour over cucumbers and lightly toss. Chill then serve.
Pizza Muffins
Ingredients:
  • 1 cup tomato sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon oregano
  • 4 English muffins, split
  • 4 Mozzarella cheese slices
  • Grated Parmesan cheese
Directions: Mix together the oil, tomato sauce and oregano. Spread on the english muffin, top with the cheeses. Put the halves on ungreased cookie sheets and broil for 3 minutes or until cheese is completely melted. Cut muffins halves into quaters.
Chicken Salad - Serves 8
Ingredients:
  • 1/4 cup minced onion
  • 1/2 cup green pepper (chopped)
  • 2 cups celery (chopped)
  • 1/4 cup butter or margarine
  • 4 cups cooked chicken (cut into chunks)
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 cup mayonnaise
  • 1/2 cup almonds (slivered) (Optional)
Directions:
 
1. Saute onion, celery and pepper in butter just until tender (but dont brown.)
2. Add lemon juice, salt and chicken and cook over low heat until everything is hot. When ready to serve, add mayonnaise and almonds.
Coleslaw
Ingredients:
  • 1 teaspoon grated onion
  • Dash pepper
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoon vinegar
  • 1 cup mayonnaise
  • 1/4 cup chopped green pepper (Optional)
  • 2 large carrots grated
  • 1 medium head of cabbage, shredded
Directions: Combine ingredients, stir until everything is completely covered. Chill before serving.
Oatmeal Muffins - 1 Dozen
Ingredients:
  • 1 cup oatmeal
  • 1/2 cup brown sugar
  • 1 cup buttermilk
  • 1 egg, beaten
  • 1/2 cup salad oil
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
Directions: Mix together the oatmeal and brown sugarand buttermilk. In a bowl mix the egg and oil, add it to the oatmeal mixture. Add the rest of the ingredients to the oatmeal mixture. Grease and flour muffin tins. Fill 2/3 full. Bake for 25 minutes or until lightly browned. Preheat oven to 375 degrees.
Raisin Drops - A No Bake Treat
Ingredients:
  • Semi sweet chocolate chips (6oz)
  • 1/4 cup light corn syrup
  • 1 1/2 teaspoons vanilla
  • 2 tablespoons confectioners' sugar
  • 2 cups raisins
Directions: Combine chocolate chips and corn syrup in the top of a double boiler. Place over boiling water and stir until chocolate is melted. Add the rest of the ingredients one by one. Drop teaspoonfuls onto a greased cookie sheet. Place in refrigerator until firm.
